Dark Rum Egg Nog
In case you haven't noticed, we like dark, dark rum. Use traditional bourbon in this recipe if you wish - some swear that it can't possibly be egg nog without bourbon.
4 eggs, separated
1/3 cup sugar
2 cups milk (whole)
1 cup cream
3 ounces Cruzan Black Strap Rum (or bourbon)
1 fresh nutmeg with a grater
ground cardamom & ground ginger
Beat egg yolks until they pale, about 4 minutes. Slowly add sugar while beating and beat until dissolved. Add remaining liquids and stir. Grate in 1 teaspoon fresh nutmeg and add 1/4 tsp each ground cardamom and ginger - all three spices to taste. After a few minutes or just before adding whites, whisk mixture to make sure that all egg yolk mix is incorporated evenly througout the cream with no lumps.
In a completely clean mixing bowl (no grease, milk, fat, egg yolks or any other substance!), beat egg whites to soft peaks. Add 1 tablespoon more of sugar and beat to stiff peaks.
Whisk everything together, chill and serve.
Note that these eggs are not cooked. Salmonella is your own risk.
